As I expected, the carboxylic acids reacting with alcohols present in the oils from distillation, would that be correct? I am not an expert in organic synthesis but recall that this is a pathway for esterification. This reaction yields water molecules as a byproduct, correct? So water is known to effect polymerization of some heavier molecules in oil, and of course is not the only constituent to impact polymerization, several variables play a role.
Is it fair to generalize as follows: the esterification reactions of lighter (smaller) molecules in Oud Oil generate floral/fruity aromas, yield water which in time is one of the variables impacting "aging," and/or polymerization?
Therefore, analysis of same oil at intervals might elucidate actual processes at work here.
